Betutu
Chicken or Ayam Betutu.
When
visiting Bali, for those who like spicy food, it feels incomplete if not taste
the Balinese food called Betutu Chicken.
Betutu Chicken is made from intact chicken or duck meat which contain seasonings, then baked in husk fire. Betutu has been known
throughout the district in Bali. One of betutu maker is Melinggih village, Payangan District, Gianyar Regency. Betutu is also a typical food of Gilimanuk.
In ancient time, betutu was served for religious events, but now it is made to be sold. Traditionally, usually
chicken or duck stuffed with spices are wrapped in
banana leaves, and planted in a hole in the ground, covered with live coals for
6-7 hours until done. But in today's modern restaurants, how to cook was already modified.
The meaning of Betutu was
actually a chicken or duck meat that is still
intact, but had taken the bones, filled spices and cooked. How to cook can be vary, either baked, or boiled with spices, such
as chilli, nutmeg, onion, lemongrass, galangal, nutmeg,
turmeric, lime leaves, ginger, kencur (kaemferia galanga), coriander, sugar, salt and other seasonings.
